Carlito, I've played the maple Moperc congas. They were incredibly loud, with amazing projection, that came with the cost of some overtones (ringing). They were a friends drums and I helped him put medium weight mule skins on them which settled down the overtones a lot but left the voice and projection of the drums largely intact.
I think the Ash drums are likely the best choice, this is probably why Michele has continued using it. The Maple drums were also VERY heavy, I'm guessing the Ash is lighter. Although the voice and projection of the Maple drums was impressive it was almost too much volume for most settings, they required a very soft touch.
