I don't have specific knowledge about recording Congas in particular, but I learn something from my friend Daniel Genton, few weeks ago regadign some Microphone. One of the best I've been trying is the Audio Technica 825 or 828. You would be able to record on DAt or Minidisc any kind of configuration of drums : "Closely matched elements provide the spatial impact and realism of a live sound field"
Difference between model AT825&828 is the switchable low-frequency roll-off
