What are some good mind exercises to develop
independence?

Mind exercise is a good term...
I often try to "think" clave and cowbell pattern while playing tumbao on congas..... but there are limits.. you know, schizophrenism, multiple personality and stuff :D
But it´s really good to IMAGINE what other rhythms fit in with yours in general...! (This being quite serious)

polyrhythms, are good. :) though they tend to be very annoying when made too complicated. ;)
eg. ( a song i play)

hh, 1-2-3-4-1-2-3-4-
ride1&2&3&41&2&3&4 or 1&2&3e&1&2&3e&
snare, --2---4--2--4
bass, 1---3--1---3--

accenting 123 on ride
then go into this with out changing hihat or ride speed,

hh, 1-2-3-1-2-3-1-2-3-
r, 1&2&3&1&2&3&1&2&3&
s, --2---1---3---2---1
b, 1---3---2----1---3-

aceenting 123 on ride then goto the first and then back to this then tothis with out changing ride or hihat:

(normal triplet)
hh, 1-2-3-4-1-2-3-4-
r, 1ea2ea3ea4ea1ea2ea3ea4ea
s, ---2-----4-----2------4--
b, 1-----3-----1-----3-----

accenting 1234 on ride, the important bit is that the ride stays the same constant and does not vary only accents vary in the rhythm, and lenght of phrase. hihat allways constant, (like the metronome).
then with out changing any speed go to a 4/4 time
whatever it is, too lazy to write more. :p
the repeat the song while everyone elsy plaus mixtures of triplets seventh tuplets and fours when your not playing the same thing. ;)

ps you dont have to play this (thought it is an interesting beat) its only a suggestion of four way independence in polyrhythms.
